If that does happen to you, shut off the fire (duh!) and leave the pan alone to cool down. As Siduri says, if you quench it in water it will damage the pan. BTW, in my last post I mentioned the steel does not undergo any structural change until it gets to 700F. I meant to say 700C - about 1300F. Not to be too pedantic but for most carbon steels it is 723C.
