If I need to be eating around 3000 to gain a pound a week ( training 3x a week ), how much less should I be eating on my off days ?

Especially if you're trying to gain mass, eat the same each day.

I'm with dbx on this one.

I eat the same except fewer carbs since there are no needs for glycoge...

^true but as far as calories in, calories out goes, I say eat the same...

For instance, my calories = 3100 on training days, an 2800 on off days...
