Hola!, foodies, professional cooks/chefs and culinary dabblers. I recently came into a large inheritance and no longer have to slave in a kitchen to pay my light bill so now I have all this extra time on my hands so I thought I'd squander some of it on this forum. I've been in the industry (BOH) for 20 years (...that's a sentence for a serious felony...) and have been a chef for 8 of those years. I'm a bit rough around the edges, but I love what I do and I have fun with it. I came up through the trenches with little "formal" training and many great teachers. Currently, I am taking a sabatical from receiving a paycheck and living "la vita loco"
