I'm switching from my cheapo pans to Mauviel copper pans with SS cooking surface

Just to test out the waters I got an 8" fry pan and used it this morning, love the pan itself but whenever I cook on SS the food gets stuck or burnt to the bottom. I put vege oil in the pan so thats not the answer

I made eggs since I couldn't think of anything else to make in an 8" pan. I used a low to medium flame. I have the same issue when frying potatoes

Are there any techniques for cooking with copper/stainless that could help me with all this burnt stickage

I really want to get the full copper set but if I'm gonna have this problem with everything I dunno...
